This rice pudding is the best I’ve ever tasted and it gets rave reviews from everyone I serve it to.
In a medium saucepan, combine the rice with 160ml (2/3 cup) of cold water. Bring to boil, reduce the heat to low.
Leaving the pan uncovered, simmer until most of the water has been absorbed (10-15mins), but the rice remains a little wet.
Meanwhile, using a vegetable peeler or sharp knife, pare a thin piece of peel (no pith) from the lemon half.
Peel, quarter and core the pear, then dice. Place into a saucepan, along with the piece of lemon peel, the juice of the ½ lemon, 1 tbsp maple syrup and ½ cinnamon stick.
Split the vanilla pod in half-length wise, scrape out the seeds from one half (set aside the other half for later) and add these and the scraped ½ pod to the pan.
Give everything a good stir and over a gentle heat, bring up to the simmer. Simmer for 15-20 mins or until the pears are tender. Remove from the heat when cooked.
Now scrap out the seeds from the reserved ½ vanilla pod. Add the seeds and the scraped pod to the rice along with almond milk, 2 tbsp maple syrup, vanilla extract, freshly ground nutmeg and ½ cinnamon stick and give everything a good stir.
Return to a simmer and cook, uncovered, for a further 20-25mins, stirring occasionally.
This pudding can be served hot or cold.
If serving hot, once the rice and pears have cooked, remove the cinnamon sticks and vanilla pods from each, spoon the rice into warm serving bowls then drizzle over a portion of cooked pears.
If serving cold, transfer to the rice and cooked pears into separate sealable containers, allow to cool then seal and put into the fridge to chill.
