Greeks have remarkably long life spans, and one of the reasons is that they use extra-virgin olive oil every day. This Greek Breakfast Hash recipe features some of the best low-carb Greek staples: eggplant, Halloumi cheese and heart-healthy extra-virgin olive oil.

Roughly dice the eggplant and the Halloumi into 1-inch (2 cm) pieces. Cook the garlic in a large pan greased with ghee over medium heat for 1 minute, until fragrant.
Add the Halloumi and cook for 5 to 8 minutes, until browned on both sides.
Add the diced eggplant and oregano, and cook for another 5 minutes.
Stir, cover, and cook for 5 more minutes, or until the eggplant is soft. Remove from the heat and set aside.
Mix the olive oil and balsamic vinegar in a small bowl. Place the cooked eggplant and Halloumi hash on serving plates. Drizzle with the olive oil and balsamic vinegar mixture.
