Instructions
Heat oil in a small nonstick skillet over medium heat. Add onions and garlic and stir frequently until just translucent, about 3 minutes.
Add the black beans, cumin, chipotle powder or smoked paprika, and stir to coat.
Add lime juice and fresh cilantro and stir to combine.
Divide the beans evenly between 2 plates.
Top each plate with 2 warmed baked eggs, ¼ cup (28 g) shredded cheese, ¼ avocado, 1 tablespoon (15 g) Greek yogurt and ¼ cup (65 g) salsa.
