Peanut butter and chocolate are two flavors that were simply meant to be together and that has never been more evident than this recipe for peanut butter swirl brownies.
Preheat the oven to 180C / 350F and grease a square baking pan with cooking spray. Whisk together the coconut flour, cocoa powder, baking soda and salt in a mixing bowl.
In a separate mixing bowl, blend the eggs, coconut oil, honey, coconut milk and vanilla extract. Add the dry ingredients to the wet and blend until smooth and well combined.
Spread the batter evenly in the prepared pan and tap it lightly on the counter a few times to release any air bubbles.
Microwave the peanut butter for 10 to 15 seconds on high heat until melted.
Stir the peanut butter smooth then drizzle over the brownie batter– gently swirl the peanut butter into the batter with a butter knife.
Bake the brownies for 25 minutes or so until the center is set – do not over-bake.
Let the brownies cool completely before cutting.
