Instructions
This is how you make a delicious, fresh and healthful dish in less than half an hour! Chervil, an often-overlooked herb adds delicate flavor and fragrance to a salmon dish and compliments it with taste and color.
Slice the salmon in half to create 2 fillets. Season meat of fish with spices and skin side with salt and pepper.
Heat 1 tbsp. of butter in a cast iron skillet over medium heat. Once hot, add to salmon skin side down.
Allow salmon to cook for 4-6 minutes while skin crisps up. Once the skin is crisp, reduce to low heat and flip salmon.
Cook salmon for about 7-15 minutes until it is cooked.
Remove salmon from the pan and set aside. Add butter, lard and spices to the pan and let brown. Once browned, add cream mix together.
For the sauce: In a small saucepan, heat lemon juice and quickly whisk in cold butter to create a fully emulsified sauce. Whisk in chervil, along with salt and pepper to taste. Serve chervil sauce on top of salmon.
